At Gusie's Cafe, we take food safety with the utmost seriousness. Our culinary repertoire celebrates authentic West African heritage gastronomy, which frequently utilizes key aromatic ingredients including groundnuts, dried seafood, and savory spices.
Our commercial kitchen facility prepares and processes dishes containing peanuts (groundnuts), tree nuts, shellfish (crayfish & dried shrimp), wild-caught fish, eggs, wheat (gluten in pastries/pies), and dairy.
While our culinary team exercises rigorous sanitization and cross-contact prevention, we operate a shared culinary environment. We cannot guarantee a 100% allergen-free environment. Clients with severe or life-threatening anaphylactic food allergies must inform our kitchen team prior to placing an order.
2. Perishable Food Safety & Safe Holding
All Gusie's Cafe catering pans, pastries, and dishes are freshly prepared on the scheduled day of service using premium organic ingredients and slow-simmered culinary techniques.
- Safe Transfer of Responsibility: Upon transfer of catering orders (via pickup at our Bowie facility or white-glove DMV van delivery), the customer assumes full legal responsibility for food safety, temperature holding, and safe consumption.
- Temperature Standards (USDA/ServSafe): Hot dishes must be maintained at 140°F (60°C) or higher (using chafing dishes with active Sterno fuel burners). Chilled beverages and salads must be held at 40°F (4°C) or below.
- The 2-Hour Rule: Perishable culinary items held at room temperature must be consumed or refrigerated within 2 hours of receipt (or 1 hour if event temperature exceeds 90°F).
- Reheating: Any cooled catering pans must be reheated in a 325°F preheated oven to an internal temperature of at least 165°F (74°C) prior to serving.
3. Cancellation, Deposit & Final Sale Terms
Due to the bespoke and perishable nature of custom West African catering dishes, food items cannot be restocked or resold once preparation has commenced.
Perishable Final Sale
All completed orders for cooked catering trays, daily meals, $2 pies, and gallon beverages are final sale and non-refundable once kitchen sourcing and prep have started.
50% Event Deposits
Catering reservation deposits (50%) are non-refundable within 7 days of the scheduled event date, as culinary staff, fresh ingredients, and kitchen time slots are committed.
Order Inspection & Shortages: Clients must inspect their order upon receipt. Any discrepancies, damages, or missing items must be reported via call or text to 301-300-4532 within 2 hours of delivery/pickup to qualify for kitchen resolution or credit.
4. Consumer Privacy & Data Security
Gusie's Cafe respects and safeguards your personal information in strict compliance with the Maryland Personal Information Protection Act (PIPDA), FTC regulations, and industry standard PCI-DSS guidelines.
- Information We Collect: We collect customer names, phone numbers, billing/shipping addresses, and email addresses solely to process catering orders, coordinate delivery logistics, and provide transaction receipts.
